Weekend Recap with a side of Homemade Chocolate Chip Pecan Banana Bread

Happy Monday!

This weekend was a busy one.  Friday night started off with a wonderful night in with my husband.  We have been busy/traveling so much that it was really nice to have a night in!  I rented 50 Shades of Grey and forced Drew to watch it with me (after whining that this was not a movie that he would EVER pick out).  I thought that the movie was okay, obviously the book was better–but isn’t that how movies/books always are?!  I will definitely be watching the next couple when they come out.

Saturday morning, I painted/put the first coat of paint on our sunroom.  Our biggest complaint about our house when we bought it was that the paint was AWFUL.  Seriously, awful.  The rooms were all painted a dark, deep shade of chocolate brown or shades of peach.  The sunroom is one of the last rooms to be painted–and Drew finally agreed that we could paint it white (yay!!).  I love some neutral grays and whites 🙂

I went for a sweaty, hot 7 mile run on Saturday afternoon before packing up to head to Hickory for Paige’s Stock the Bar Party.  The party was so much fun and a great way to spend time with some of the wedding guests before her wedding.  Stock the Bar party is a great idea–hello a lot of booze.  I spent the night in Hickory so that I could meet Lucy, a 3 year old Vizsla that Drew and I may adopt from Paige’s parents.  We are not sure how she will get along with Scout–but we are going to see!

Sunday morning, I drove back home to do a little yard work (it never ends!) and lounge by the pool with the husband.  I finished the day off baking banana bread with chocolate chips and pecans.  We had three bananas that were going bad which was perfect to make some banana bread.  I followed this recipe for inspiration but ultimately changed around/added ingredients.

Banana Chocolate Chip Pecan Banana Bread Recipe:

  • 1 cup AP flour and 1 cup coconut flour (sold at TJs)
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt

Mix dry ingredients together, set aside

  • 3/4 cup brown sugar
  • 1 stick of butter

Beat wet ingredients with a mixer until creamy

Mix in with the wet ingredients:

  • 3 ripe bananas
  • 2 eggs

Add the dry ingredients (flour mixture)

Stir in chopped pecans and chocolate chips

Pour in a bread pan and bake for 45 minutes in a 350 oven (or until a knife comes out clean)

    It is not just you… it is EXTREMELY hot!! I didn’t realize you were close to Hickory.. my fiance works at the hospital there. We are supposed to have record highs here in Winston-Salem today, ugh.

    I totally think you should adopt the Vizsla!!! She’s adorable. They are really similar to redbone coonhounds (Dixie’s breed) and are great runners!

      That is awesome that he works in Hickory–it is a great town. I grew up there and live 1.5 hours away! They are great runners and super sweet—I am just a little worried she is too hyper! We are going to introduce her to Scout and see how they interact 🙂 fingers crossed they do well!!

    I spent the majority of my weekend with friends, but was able to squeeze in a little beach time Sunday which I loved. And June is quite hot, which I don’t mind… it’s the humidity I’m trying to avoid haha. And I like to cut and freeze my bananas before they get too ripe. They’re so refreshing to eat frozen (great snack), and if you add them to smoothies frozen, it gives it a thicker, more like a milkshake consistency : )
